  1. 1. Place the coffee together with the spices in a pot and boil it down until only about 100 milliliters remain. Then let the mixture cool down.
  2. 2. Melt the chocolate in a double boiler.
  3. 3. Soak the gelatin in cold water.
  4. 4. Whisk the egg (including the yolk) in a double boiler until creamy. Squeeze out the gelatin, add it along with the melted chocolate to the egg mixture, and stir everything well.
  5. 5. Strain the reduced spiced coffee through a sieve, stir in the cognac, and add the liquid to the mixture. Place the bowl in the refrigerator until the mixture starts to set.
  6. 6. Whip the cream until stiff.
  7. 7. Whisk the egg whites together with the sugar and a pinch of salt until stiff.
  8. 8. Gently fold the whipped cream and the egg whites into the coffee mixture.
  9. 9. Grease a bowl with a little melted butter, fill it with the mousse, and place it in the refrigerator covered to allow it to set.
  10. 10. To serve, scoop out portions of the mousse and serve them together with pieces of Baumkuchen (layer cake).
