🥤 Coffee Mousse

Ingredients
- 0.5 l strong coffee
- 2 cloves
- 1 cinnamon stick
- 2 vanilla pods
- 1 bay leaf
- 1 tsp coriander seeds
- 150 g white couverture chocolate
- 4 leaves gelatin
- 1 egg
- 1 egg yolk
- 30 ml cognac
- 500 ml whipping cream
- 3 egg whites
- 50 g sugar
- 1 pinch salt
- bundt cake cubes or slices (ready-made product)
Instructions
- 1. Place the coffee together with the spices in a pot and boil it down until only about 100 milliliters remain. Then let the mixture cool down.
- 2. Melt the chocolate in a double boiler.
- 3. Soak the gelatin in cold water.
- 4. Whisk the egg (including the yolk) in a double boiler until creamy. Squeeze out the gelatin, add it along with the melted chocolate to the egg mixture, and stir everything well.
- 5. Strain the reduced spiced coffee through a sieve, stir in the cognac, and add the liquid to the mixture. Place the bowl in the refrigerator until the mixture starts to set.
- 6. Whip the cream until stiff.
- 7. Whisk the egg whites together with the sugar and a pinch of salt until stiff.
- 8. Gently fold the whipped cream and the egg whites into the coffee mixture.
- 9. Grease a bowl with a little melted butter, fill it with the mousse, and place it in the refrigerator covered to allow it to set.
- 10. To serve, scoop out portions of the mousse and serve them together with pieces of Baumkuchen (layer cake).
