  1. 1. Put 70 g of sugar, orange juice, and 125 ml of water into a pot.
  2. 2. Stir the mixture well until the sugar has dissolved.
  3. 3. Bring the liquid to a boil.
  4. 4. Let it boil vigorously for 1 minute.
  5. 5. Remove the pot from the heat and stir in the espresso (strong coffee).
  6. 6. Slice a vanilla pod lengthwise.
  7. 7. Scrape out the pulp (seeds) from the pod.
  8. 8. Add the vanilla pulp and the empty pod to the coffee mixture.
  9. 9. Let the mixture cool down completely.
  10. 10. Strain the liquid through a fine sieve into a shallow metal dish.
  11. 11. Place the dish in the freezer for 2 hours.
  12. 12. Take the dish out of the freezer every 30 minutes.
  13. 13. Stir the mixture vigorously with a fork.
  14. 14. Repeat the stirring until the time is up.
  15. 15. Whip the cream with the remaining sugar and orange liqueur until it is semi-stiff.
  16. 16. Distribute the finished granita into glasses.
  17. 17. Add a dollop of cream on top.
  18. 18. Insert a wafer roll into the glass if you like.
