  1. 1. Make a lengthwise cut into the dates.
  2. 2. Remove the pits from the dates.
  3. 3. Break the cinnamon stick into small pieces.
  4. 4. Place the dates, cinnamon pieces, and allspice berries into a large jar.
  5. 5. Lightly crush the cardamom pods with a heavy knife.
  6. 6. Heat the espresso with the sugar and cardamom.
  7. 7. Heat the mixture until just below the boiling point.
  8. 8. Pour the hot coffee mixture over the dates in the jar.
  9. 9. Seal the jar.
  10. 10. Let the dates steep in the refrigerator for 2 to 3 days.
  11. 11. Wash the orange thoroughly.
  12. 12. Dry the orange.
  13. 13. Grate the orange peel.
  14. 14. Line a sieve with a coffee filter or cheesecloth.
  15. 15. Place the goat yogurt into the lined sieve.
  16. 16. Cover the yogurt with foil.
  17. 17. Let the yogurt drain overnight in the refrigerator.
  18. 18. Stir the drained yogurt until smooth.
  19. 19. Mix the yogurt with 1 teaspoon of orange peel.
  20. 20. Mix the yogurt with the orange juice.
  21. 21. Serve the very cold dates.
  22. 22. Garnish the dates with orange zest if desired.
  23. 23. Garnish the dates with lemon balm if desired.
