🍽️ Crispy Cheese Puffs

Ingredients
- 70 ml Milk
- 60 ml Water
- 50 g Butter
- Salt
- Sugar
- 75 g Flour
- 2 Eggs
- 50 g grated Gruyère cheese
- 1 pinch Cayenne pepper
- 1 Egg yolk
Instructions
- 1. Put milk, water, butter, salt, and sugar into a pot.
- 2. Heat the mixture until it boils.
- 3. Remove the pot from the heat.
- 4. Add the flour to the hot liquid.
- 5. Stir everything smooth with a wooden spoon.
- 6. Place the pot back on the stove.
- 7. Continue stirring over medium heat.
- 8. Stop stirring when a white film forms on the bottom of the pot.
- 9. Transfer the dough into a bowl.
- 10. Let the dough cool down slightly.
- 11. Attach the dough hooks to your electric hand mixer.
- 12. Add the eggs to the dough gradually.
- 13. Mix the eggs into the dough with the device.
- 14. Knead 35 g of cheese and cayenne pepper into the dough.
- 15. Fill the dough into a piping bag.
- 16. Use a medium nozzle with approx. 1 cm diameter.
- 17. Grease a baking sheet.
- 18. Lightly dust the sheet with flour.
- 19. Pipe about 20 to 25 dough dollops onto the sheet with some space between them.
- 20. Whisk the egg yolk with 1 tablespoon of water.
- 21. Brush the dollops with the egg yolk mixture.
- 22. Sprinkle the remaining cheese over the dollops.
- 23. Add a few drops of water between the dollops on the sheet.
- 24. Preheat the oven to 200 °C.
- 25. Bake the puffs in the oven for 15 to 20 minutes.
- 26. Let the cheese puffs cool on a wire rack.
- 27. Serve them best while warm.
