  1. 1. Put milk, water, butter, salt, and sugar into a pot.
  2. 2. Heat the mixture until it boils.
  3. 3. Remove the pot from the heat.
  4. 4. Add the flour to the hot liquid.
  5. 5. Stir everything smooth with a wooden spoon.
  6. 6. Place the pot back on the stove.
  7. 7. Continue stirring over medium heat.
  8. 8. Stop stirring when a white film forms on the bottom of the pot.
  9. 9. Transfer the dough into a bowl.
  10. 10. Let the dough cool down slightly.
  11. 11. Attach the dough hooks to your electric hand mixer.
  12. 12. Add the eggs to the dough gradually.
  13. 13. Mix the eggs into the dough with the device.
  14. 14. Knead 35 g of cheese and cayenne pepper into the dough.
  15. 15. Fill the dough into a piping bag.
  16. 16. Use a medium nozzle with approx. 1 cm diameter.
  17. 17. Grease a baking sheet.
  18. 18. Lightly dust the sheet with flour.
  19. 19. Pipe about 20 to 25 dough dollops onto the sheet with some space between them.
  20. 20. Whisk the egg yolk with 1 tablespoon of water.
  21. 21. Brush the dollops with the egg yolk mixture.
  22. 22. Sprinkle the remaining cheese over the dollops.
  23. 23. Add a few drops of water between the dollops on the sheet.
  24. 24. Preheat the oven to 200 °C.
  25. 25. Bake the puffs in the oven for 15 to 20 minutes.
  26. 26. Let the cheese puffs cool on a wire rack.
  27. 27. Serve them best while warm.
