🍽️ Crispy Cheese Tortillas with Fresh Avocado and Tomato Dip

Ingredients
- 6 ripe tomatoes
- 2 spring onions
- 1 garlic clove
- 3 tbsp olive oil
- 2 tbsp lime juice
- salt
- pepper (from the mill)
- 1 red chili pepper
- 2 ripe avocados
- lemon juice
- olive oil

- 250 g mixed grated cheese (e.g. Manchego, Mozzarella and Feta)
- 8 tortilla wraps (approx. 20 cm diameter each)
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately shock the tomatoes in cold water.
- 3. Peel the skin off the tomatoes.
- 4. Quarter the tomatoes and remove the core.
- 5. Cut the tomato flesh into small cubes.
- 6. Wash and clean the spring onions.
- 7. Finely chop the spring onions.
- 8. Peel the garlic.
- 9. Finely chop the garlic as well.
- 10. Mix the tomato cubes, spring onions, and garlic in a bowl.
- 11. Add olive oil and lime juice.
- 12. Season the mixture with salt and pepper to taste.
- 13. Wash the chili pepper.
- 14. Halve the chili lengthwise.
- 15. Remove the seeds and white inner walls of the chili.
- 16. Finely chop the chili.
- 17. Halve the avocados.
- 18. Twist out the pits from the avocado halves.
- 19. Carefully press the flesh out of the skin.
- 20. Cut the flesh into thick wedges.
- 21. Drizzle the avocado with lemon juice.
- 22. Heat a grill pan with 1 tablespoon of oil.
- 23. Fry the avocado wedges briefly on both sides.
- 24. Remove the avocado from the pan and set it aside.
- 25. Wash and clean additional spring onions.
- 26. Slice the spring onions into thin rings.
- 27. Place one tortilla in the pan.
- 28. Sprinkle some cheese onto the tortilla.
- 29. Top the tortilla with the chopped chili.
- 30. Place the avocado wedges on top.
- 31. Sprinkle the spring onion rings over it.
- 32. Sprinkle more cheese over the filling.
- 33. Cover the filling with a second tortilla.
- 34. Fry the quesadilla for 1 to 2 minutes.
- 35. Flip the quesadilla.
- 36. Fry the other side for another 1 to 2 minutes.
- 37. Remove the finished quesadilla from the pan.
- 38. Cut the quesadilla into pieces.
- 39. Repeat the process with the remaining ingredients for 3 more quesadillas.
- 40. Arrange the quesadillas on plates.
- 41. Serve the quesadillas with the tomato salsa.
