  3. 3. Peel the skin off the tomatoes.
  4. 4. Quarter the tomatoes and remove the core.
  5. 5. Cut the tomato flesh into small cubes.
  6. 6. Wash and clean the spring onions.
  7. 7. Finely chop the spring onions.
  8. 8. Peel the garlic.
  9. 9. Finely chop the garlic as well.
  10. 10. Mix the tomato cubes, spring onions, and garlic in a bowl.
  11. 11. Add olive oil and lime juice.
  12. 12. Season the mixture with salt and pepper to taste.
  13. 13. Wash the chili pepper.
  14. 14. Halve the chili lengthwise.
  15. 15. Remove the seeds and white inner walls of the chili.
  16. 16. Finely chop the chili.
  17. 17. Halve the avocados.
  18. 18. Twist out the pits from the avocado halves.
  19. 19. Carefully press the flesh out of the skin.
  20. 20. Cut the flesh into thick wedges.
  21. 21. Drizzle the avocado with lemon juice.
  22. 22. Heat a grill pan with 1 tablespoon of oil.
  23. 23. Fry the avocado wedges briefly on both sides.
  24. 24. Remove the avocado from the pan and set it aside.
  25. 25. Wash and clean additional spring onions.
  26. 26. Slice the spring onions into thin rings.
  27. 27. Place one tortilla in the pan.
  28. 28. Sprinkle some cheese onto the tortilla.
  29. 29. Top the tortilla with the chopped chili.
  30. 30. Place the avocado wedges on top.
  31. 31. Sprinkle the spring onion rings over it.
  32. 32. Sprinkle more cheese over the filling.
  33. 33. Cover the filling with a second tortilla.
  34. 34. Fry the quesadilla for 1 to 2 minutes.
  35. 35. Flip the quesadilla.
  36. 36. Fry the other side for another 1 to 2 minutes.
  37. 37. Remove the finished quesadilla from the pan.
  38. 38. Cut the quesadilla into pieces.
  39. 39. Repeat the process with the remaining ingredients for 3 more quesadillas.
  40. 40. Arrange the quesadillas on plates.
  41. 41. Serve the quesadillas with the tomato salsa.
