  1. 1. Preheat the oven to 150 degrees Celsius. Use convection (fan) at 130 degrees or gas level 1 to 2.
  2. 2. Bring plenty of water with salt to a boil in a large pot.
  3. 3. Mix spelt flour, eggs, grated nutmeg, milk, and a pinch of salt in a bowl until you have a firm dough.
  4. 4. Lightly moisten the back of a large knife or a spätzle press.
  5. 5. Scrape the dough immediately into the boiling salted water.
  6. 6. Remove the spätzle as soon as they float to the surface.
  7. 7. Let the spätzle sit in the water for a few more minutes until they are cooked through.
  8. 8. Remove the spätzle from the water using a slotted spoon.
  9. 9. Let the spätzle drain well.
  10. 10. Toss the spätzle in a pan over low heat with melted butter.
  11. 11. Place the spätzle in layers into a baking dish.
  12. 12. Sprinkle grated cheese between the layers of spätzle.
  13. 13. Cover the baking dish.
  14. 14. Place the dish in the preheated oven until the cheese has melted.
  15. 15. Peel the onions while the spätzle are baking.
  16. 16. Slice the onions into thin rings.
  17. 17. Fry the onion rings in a pan over medium heat with butter until golden brown.
  18. 18. Serve the cheese spätzle on pre-warmed plates.
  19. 19. Garnish the spätzle with the fried onions and fresh chives.
