🍽️ Classic Cheese Spätzle

Ingredients
- Salt
- 400 g spelt flour
- 4 eggs
- Nutmeg
- 200 ml milk
- 4 tbsp butter
- 200 g freshly grated Gruyère cheese (42% fat in dry matter)
- 2 onions
- 2 tbsp chive rings
Instructions
- 1. Preheat the oven to 150 degrees Celsius. Use convection (fan) at 130 degrees or gas level 1 to 2.
- 2. Bring plenty of water with salt to a boil in a large pot.
- 3. Mix spelt flour, eggs, grated nutmeg, milk, and a pinch of salt in a bowl until you have a firm dough.
- 4. Lightly moisten the back of a large knife or a spätzle press.
- 5. Scrape the dough immediately into the boiling salted water.
- 6. Remove the spätzle as soon as they float to the surface.
- 7. Let the spätzle sit in the water for a few more minutes until they are cooked through.
- 8. Remove the spätzle from the water using a slotted spoon.
- 9. Let the spätzle drain well.
- 10. Toss the spätzle in a pan over low heat with melted butter.
- 11. Place the spätzle in layers into a baking dish.
- 12. Sprinkle grated cheese between the layers of spätzle.
- 13. Cover the baking dish.
- 14. Place the dish in the preheated oven until the cheese has melted.
- 15. Peel the onions while the spätzle are baking.
- 16. Slice the onions into thin rings.
- 17. Fry the onion rings in a pan over medium heat with butter until golden brown.
- 18. Serve the cheese spätzle on pre-warmed plates.
- 19. Garnish the spätzle with the fried onions and fresh chives.
