Ingredients
- 300 g medium Gouda
- 4 eggs
- 3 egg whites
- salt
- black pepper (from the mill)
- freshly grated nutmeg
- butter (for the molds)
- 4 ramekins
Instructions
- 1. Grate the cheese. Separate the eggs by dividing the egg whites from the yolks. Grease the ramekins generously with soft butter. Whip the egg whites with a pinch of salt until stiff.
- 2. Gently fold in the egg yolks and the grated Gouda, then season to taste. Fill the mixture into the ramekins and bake at 180 °C for about 40 minutes. Serve the soufflé immediately.
