  1. 1. Melt the butter in a pot.
  2. 2. Stir the flour into the butter.
  3. 3. Let the mixture foam briefly.
  4. 4. Pour in the milk while stirring continuously.
  5. 5. Let the sauce simmer for a few minutes.
  6. 6. Season the sauce with salt, pepper, and nutmeg.
  7. 7. Remove the pot from the heat.
  8. 8. Mix the quark with the two types of cheese.
  9. 9. Stir the egg yolk into the cheese mixture.
  10. 10. Grease the bottom part of the soufflé molds with butter.
  11. 11. Coat the molds with breadcrumbs.
  12. 12. Whip the egg whites until stiff.
  13. 13. Take a quarter of the egg whites and stir it into the cheese mixture.
  14. 14. Gently fold in the remaining egg whites.
  15. 15. Fill the molds two-thirds full with the mixture.
  16. 16. Preheat the oven to 180°C.
  17. 17. Bake the soufflés on the middle rack.
  18. 18. Bake them for about 30 minutes until golden brown.
  19. 19. Serve the soufflés immediately in the molds.
