  1. 1. Mix flour, salt, oil, and about 150 milliliters of lukewarm water into a smooth dough.
  2. 2. If the dough crumbles, add a little more water.
  3. 3. Knead the dough vigorously for about 10 minutes and slap it against the work surface several times.
  4. 4. Shape the dough into a ball, brush it with oil, and wrap it in cling film.
  5. 5. Let the dough rest at room temperature for about 30 minutes.
  6. 6. Preheat the oven to 200 degrees Celsius using top and bottom heat.
  7. 7. Line a baking tray with baking paper.
  8. 8. Mash the feta cheese with a fork.
  9. 9. Mix the mashed feta with the cottage cheese, yogurt, and eggs.
  10. 10. Season the filling with thyme, salt, and pepper.
  11. 11. Divide the dough into two or three portions and knead them well again.
  12. 12. Dust a kitchen towel with flour and roll one dough portion into a long strip.
  13. 13. The dough should become so thin that the pattern of the kitchen towel is visible.
  14. 14. Brush the dough thinly with melted butter.
  15. 15. Spread some filling in the center of the dough.
  16. 16. Roll the dough up tightly.
  17. 17. Shape the roll into a snail on the baking tray and place the seam side down.
  18. 18. Repeat the process with the remaining dough.
  19. 19. Place the other snails tightly around the first roll.
  20. 20. Push the end of the last dough roll downwards.
