🍽️ Cheese Quiche

Ingredients
- 250 g flour
- 125 g cold butter
- 1 pinch salt
- 1 egg
- 250 g Swiss Emmental (grated)
- 2 tbsp flour
- 300 g whipping cream
- 2 eggs
- 1 pinch cayenne pepper
- salt
Instructions
- 1. Pile the flour onto a clean work surface, mix it with salt, and press a small indentation into the center of the flour with your palm. Cut the cold butter into small cubes, arrange them around the indentation, and place the egg right in the middle.
- 2. Finely chop all ingredients with a knife until small dough crumbs form. Quickly knead the dough into a smooth ball with your hands, wrap it in plastic wrap, and place it in the refrigerator for about 30 minutes.
- 3. Place the dough between two sheets of plastic wrap and roll it out thinly. Press the dough sheet into your baking dish, form a nice edge, and trim off any excess dough at the rim.
- 4. Whisk the cream with a little flour, the eggs, cayenne pepper, and a pinch of salt until smooth. Stir in the grated cheese.
- 5. Pour the egg and cheese mixture evenly over the prepared dough base.
- 6. Bake the quiche in the preheated oven at 180 degrees Celsius (top/bottom heat) on the lower rack for about 45 minutes, until golden brown.
