🍽️ Fluffy Cheese Omelet with Spring Onions

Ingredients
- 2 red onions
- 1 bunch thin spring onions
- 1 tbsp olive oil
- 8 eggs
- salt
- pepper
- 150 g Fontina or mountain cheese in a block (45 % fat in dry matter)
- 20 g butter (4 tsp)
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Wash the spring onions and slice them into thin rings.
- 3. Set aside a few spring onion rings to use for garnishing later.
- 4. Heat some oil in a small frying pan.
- 5. Add the onion cubes and spring onion rings to the pan.
- 6. Sauté the vegetables for 3 minutes over medium heat.
- 7. Divide the sautéed onion mixture evenly between two frying pans.
- 8. Crack the eggs into a bowl.
- 9. Season the eggs with salt and pepper.
- 10. Grate the cheese finely.
- 11. Stir the grated cheese into the egg mixture.
- 12. Add one teaspoon of butter to each of the two frying pans.
- 13. Heat the butter in the pans.
- 14. Pour one quarter of the egg mixture into each of the two pans.
- 15. Let the omelets cook for 4 to 5 minutes over medium heat until set.
- 16. Fold the omelets in half using a spatula.
- 17. Preheat the oven to 80 degrees Celsius (convection 60 degrees Celsius or gas mark 1).
- 18. Keep the finished omelets warm in the preheated oven.
- 19. Repeat the process with the remaining ingredients to make two more omelets.
- 20. Carefully slide the omelets out of the pans and place them on plates.
- 21. Garnish the omelets with the reserved spring onion rings.
- 22. Serve the omelets immediately.
