  1. 1. Peel the onion and cut it into small cubes.
  2. 2. Wash the spring onions and slice them into thin rings.
  3. 3. Set aside a few spring onion rings to use for garnishing later.
  4. 4. Heat some oil in a small frying pan.
  5. 5. Add the onion cubes and spring onion rings to the pan.
  6. 6. Sauté the vegetables for 3 minutes over medium heat.
  7. 7. Divide the sautéed onion mixture evenly between two frying pans.
  8. 8. Crack the eggs into a bowl.
  9. 9. Season the eggs with salt and pepper.
  10. 10. Grate the cheese finely.
  11. 11. Stir the grated cheese into the egg mixture.
  12. 12. Add one teaspoon of butter to each of the two frying pans.
  13. 13. Heat the butter in the pans.
  14. 14. Pour one quarter of the egg mixture into each of the two pans.
  15. 15. Let the omelets cook for 4 to 5 minutes over medium heat until set.
  16. 16. Fold the omelets in half using a spatula.
  17. 17. Preheat the oven to 80 degrees Celsius (convection 60 degrees Celsius or gas mark 1).
  18. 18. Keep the finished omelets warm in the preheated oven.
  19. 19. Repeat the process with the remaining ingredients to make two more omelets.
  20. 20. Carefully slide the omelets out of the pans and place them on plates.
  21. 21. Garnish the omelets with the reserved spring onion rings.
  22. 22. Serve the omelets immediately.
