🍽️ Crispy Cheese Omelette with Peppers

Ingredients
- 3 eggs
- 2 tbsp heavy cream
- salt
- pepper (from the mill)
- 1 spring onion
- 1 red bell pepper
- 1 tbsp butter
- 2 tbsp grated cheese (e.g. cheddar)
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top heat.
- 2. Whisk the eggs in a bowl until smooth with the cream.
- 3. Season the egg mixture generously with salt and pepper.
- 4. Wash the spring onions and remove the dry ends.
- 5. Slice the spring onions into thin rings.
- 6. Wash the bell pepper and cut it in half lengthwise.
- 7. Remove the seeds and white pith from the bell pepper.
- 8. Dice the bell pepper flesh into small cubes.
- 9. Heat the butter in a non-stick frying pan.
- 10. Pour the egg mixture into the hot pan.
- 11. Distribute the spring onion rings and pepper cubes evenly over the egg.
- 12. Let the omelette set for one to two minutes.
- 13. Fry the underside until golden brown.
- 14. Fold the omelette carefully in half.
- 15. Spread the grated cheese over the surface of the omelette.
- 16. Place the pan in the oven for about five minutes.
- 17. Remove the omelette when the cheese is golden brown and bubbly.
