Ingredients
- 300 g flour
- 0.5 tsp salt
- 2 tsp baking powder
- 0.5 tsp paprika powder (sweet)
- 1 tsp herbs de Provence (dried)
- 150 g parmesan (freshly grated)
- 300 ml buttermilk
- 1 egg
- 5 tbsp olive oil
- butter
- breadcrumbs
- 1 muffin baking tray (or 12 paper liners)
Instructions
- 1. Mix the flour with a pinch of salt, baking powder, paprika powder, and the chosen herbs in a large bowl.
- 2. Add the grated cheese to the flour mixture and stir it in evenly.
- 3. Whisk the buttermilk, the egg, and the oil in a separate small bowl.
- 4. Pour the liquid mixture into the dry ingredients and stir everything together briefly until a smooth batter forms.
- 5. Grease the muffin cups or the muffin tin with some butter.
- 6. Coat the greased cups with breadcrumbs so the muffins do not stick later.
- 7. Distribute the batter evenly among the prepared cups.
- 8. Preheat the oven to 200 degrees Celsius.
- 9. Place the tray in the preheated oven and bake the muffins for about 20 minutes.
- 10. Check the baking time by inserting a wooden skewer into the center of a muffin; it should come out clean.
- 11. Remove the tray from the oven and let the muffins cool down briefly in the cups.
- 12. Carefully loosen the muffins from the cups.
- 13. Place the muffins on a wire rack to cool down completely on all sides.
