Ingredients
- 750 g Skyr
- 1 small organic orange
- 1 vanilla pod
- 4 eggs
- 1 pinch salt
- 125 g honey
- 250 g curd cheese
- 60 g spelt wholemeal semolina (4 tbsp)
- 2 tbsp cocoa powder (for dusting)
Instructions
- 1. Let the quark drain well. Rinse the orange under hot water, pat it dry, and finely grate the zest. Cut the orange in half and squeeze out the juice. Slit the vanilla pod lengthwise and scrape out the seeds.
- 2. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks and honey until creamy using a hand mixer. Stir in the quark, 1 tsp orange zest, 4 tbsp orange juice, vanilla seeds, cream cheese, and semolina. Gently fold in the egg whites.
- 3. Line the springform pan with baking paper, pour in the quark mixture, and smooth the top. Bake the cake in the oven at 180 °C (convection 160 °C; gas mark 2–3) for 1 hour. Cover with aluminum foil if necessary.
- 4. Remove the cake from the oven and let it cool in the pan for 30 minutes. Place a cake stencil on the cake and dust it with cocoa powder.
