🍰 Cheesecake with Plum

Ingredients
- 150 g Butter
- 70 g Sugar
- 1 Egg yolk
- 200 g Flour
- 0.5 packet Baking powder
- Fat (for the pan)
- 500 g Plums
- 750 g Quark
- 200 g Crème fraîche
- 150 g Sugar
- 3 tbsp Lemon juice
- 3 tbsp Almond kernels
- 2 Eggs
- 3 Egg yolks
- Powdered sugar (for dusting)
Instructions
- 1. Beat the butter, sugar, and egg yolks with a mixer until the mixture is fluffy and airy.
- 2. Gently fold the flour and baking powder into the butter mixture.
- 3. Knead everything by hand or with a machine until you have a smooth dough.
- 4. Wrap the dough in cling film and place it in the refrigerator for 1 hour.
- 5. Stir the quark (curd cheese) and crème fraîche in a bowl until creamy.
- 6. Add the ground almonds, whole eggs, and egg yolk to the quark mixture and mix everything well.
- 7. Take the dough out of the refrigerator and roll it out flat on a lightly floured work surface.
- 8. Place the dough into a greased cake pan.
- 9. Press a border about 4 cm high at the edges of the pan.
- 10. Prick the bottom of the dough several times with a fork so it does not rise.
- 11. Pour the quark mixture evenly over the dough base.
- 12. Loosely cover the surface of the cake with aluminum foil.
- 13. Preheat the oven to 175 °C and bake the cake for approx. 1 hour.
- 14. Make sure the surface does not become too dark. If necessary, cover it with the foil earlier.
- 15. Pit the plums while the cake is baking.
- 16. Remove the aluminum foil from the cake after the first baking time is over.
- 17. Place the plums in circular rows on top of the cake.
- 18. Finish baking the cake for another 30 minutes.
