🍰 Curd Cake with Crumble Topping

Ingredients
- 100 g wheat flour Type 405
- 100 g whole wheat flour
- 75 g sugar
- 1 egg (size M)
- 100 g butter
- 3 tbsp cold water
- 750 g low-fat quark
- 150 g sugar
- 1 packet vanilla sugar
- 1 packet vanilla pudding powder
- 2 eggs (size M)
- lemon zest
- 120 g butter
- 200 g flour
- 100 g sugar
- powdered sugar
Instructions
- 1. Put both types of flour and the sugar into a bowl and mix them.
- 2. Add the egg, the butter cut into cubes, and the water.
- 3. Chop the ingredients with a knife until dry crumbs form.
- 4. Knead the crumbs with your hands into a smooth dough.
- 5. Roll the dough out roundly on a lightly floured surface.
- 6. Line the bottom of a springform pan (28-30 cm diameter) with baking paper.
- 7. Place the dough in the pan and press up a crust.
- 8. Prick the dough base several times with a fork.
- 9. Place the pan in the refrigerator for 1 hour.
- 10. Preheat the oven (Electric oven: 200 degrees, Gas: Level 3-4, Fan-assisted: 180 degrees).
- 11. Stir the curd cheese with the sugar, vanilla sugar, pudding powder, eggs, and lemon zest until smooth.
- 12. Spread the mixture evenly over the dough base.
- 13. Melt the butter for the crumble topping.
- 14. Mix the flour with the sugar.
- 15. Add the melted butter and process the mixture with the beaters of a hand mixer into crumbs.
- 16. Distribute the crumbs over the cake.
- 17. Bake the cake in the oven for approx. 30-35 minutes.
- 18. Let the cake cool down.
- 19. Dust the cake with powdered sugar.
