🍰 Cheesecake with Chocolate Cookies

Ingredients
- 250 g dark chocolate cookie
- 150 g butter
- 8 sheets white gelatin
- 600 g cream cheese
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 100 g sugar
- 250 ml whipping cream
- 1 tbsp vanilla sugar
- 150 g cookie
Instructions
- 1. Break the cookies into a freezer bag.
- 2. Crush the cookies into fine crumbs using a rolling pin.
- 3. Melt the butter.
- 4. Mix the melted butter with the crumbs.
- 5. Press the mixture into a springform pan.
- 6. Form the base and the sides of the pan with it.
- 7. Place the pan in the refrigerator.
- 8. Soak the gelatin in cold water.
- 9. Mix the cream cheese with the lemon zest, lemon juice, and sugar until smooth.
- 10. Whip the cream with the vanilla sugar until stiff.
- 11. Fold the whipped cream into the cream cheese mixture.
- 12. Drain the gelatin.
- 13. Melt the gelatin in a small saucepan over low heat.
- 14. Take some cream cheese mixture aside.
- 15. Mix the drained gelatin with the reserved cream.
- 16. Stir this mixture into the remaining cream cheese cream.
- 17. Spread half of the cream over the cookie base.
- 18. Place the Oreo cookies on top.
- 19. Spread the rest of the cream over them.
- 20. Chill the cake for about 4 hours.
