  1. 1. Cut the pineapple into small cubes.
  2. 2. Rinse the lemon under hot water and dry it.
  3. 3. Grate the lemon zest finely.
  4. 4. Cut the lemon in half and squeeze out the juice.
  5. 5. Line the bottom of a 24 cm springform pan with baking paper.
  6. 6. Add the lemon juice and zest to a bowl.
  7. 7. Add quark (a type of fresh cheese), sugar, eggs, milk, pudding powder, and cinnamon.
  8. 8. Mix the ingredients well with the beaters of a hand mixer.
  9. 9. Fold the pineapple pieces into the batter.
  10. 10. Pour the batter into the prepared pan.
  11. 11. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2-3).
  12. 12. Bake the cake for 55 to 60 minutes in the preheated oven.
  13. 13. Insert a wooden skewer into the center of the cake.
  14. 14. Check if the skewer comes out clean.
  15. 15. Continue baking for a few more minutes if necessary.
  16. 16. Let the cake cool on a wire rack.
  17. 17. Carefully release the cake from the pan.
  18. 18. Place the cake on a serving plate.
  19. 19. Put powdered sugar into a tea strainer.
  20. 20. Dust the cheesecake with the powdered sugar.
