🍰 Pineapple Cheesecake

Ingredients
- 300 g pineapple (3 slice)
- 1 small organic lemon
- 500 g low-fat quark
- 100 g sugar
- 3 eggs
- 100 ml milk (1.5 % fat)
- 1 pack vanilla pudding powder
- 1 pinch cinnamon
- 1 tbsp powdered sugar
Instructions
- 1. Cut the pineapple into small cubes.
- 2. Rinse the lemon under hot water and dry it.
- 3. Grate the lemon zest finely.
- 4. Cut the lemon in half and squeeze out the juice.
- 5. Line the bottom of a 24 cm springform pan with baking paper.
- 6. Add the lemon juice and zest to a bowl.
- 7. Add quark (a type of fresh cheese), sugar, eggs, milk, pudding powder, and cinnamon.
- 8. Mix the ingredients well with the beaters of a hand mixer.
- 9. Fold the pineapple pieces into the batter.
- 10. Pour the batter into the prepared pan.
- 11. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2-3).
- 12. Bake the cake for 55 to 60 minutes in the preheated oven.
- 13. Insert a wooden skewer into the center of the cake.
- 14. Check if the skewer comes out clean.
- 15. Continue baking for a few more minutes if necessary.
- 16. Let the cake cool on a wire rack.
- 17. Carefully release the cake from the pan.
- 18. Place the cake on a serving plate.
- 19. Put powdered sugar into a tea strainer.
- 20. Dust the cheesecake with the powdered sugar.
