  4. 4. Cut the tomatoes into quarters and remove the core with the seeds.
  5. 5. Dice the tomato flesh into small cubes.
  6. 6. Wash the bell peppers thoroughly.
  7. 7. Cut the bell peppers into quarters and remove the seeds.
  8. 8. Cut the bell peppers into thin strips.
  9. 9. Halve the avocado and twist out the pit.
  10. 10. Carefully press the flesh out of the shell.
  11. 11. Slice the avocado into thin strips.
  12. 12. Mix the avocado strips with the lemon juice.
  13. 13. Peel the shallots.
  14. 14. Slice the shallots into thin rings.
  15. 15. Wash the meat and pat it dry with kitchen paper.
  16. 16. Cut the meat into thin strips.
  17. 17. Heat 2 tablespoons of oil in a large frying pan.
  18. 18. Fry the meat strips vigorously on all sides.
  19. 19. Season the meat with salt and pepper.
  20. 20. Add the shallot rings to the meat in the pan.
  21. 21. Sauté the shallots briefly until they are soft.
  22. 22. Remove the pan from the heat.
  23. 23. Heat an uncoated frying pan with a little oil.
  24. 24. Place one tortilla in the hot pan.
  25. 25. Spread a quarter of the avocado on the tortilla.

  29. 29. Add a quarter of the meat mixture on top.
  30. 30. Sprinkle some cheese over the filling.
  31. 31. Season with a little salt and pepper.
  32. 32. Place a second tortilla on top.
  33. 33. Press the tortilla down lightly.
  34. 34. Fry the tortilla for 1 to 2 minutes until golden brown.
  35. 35. Use a plate to flip the tortilla.
  36. 36. Fry the other side until golden brown until the cheese is melted.
  37. 37. Repeat the process with the remaining ingredients for four more tortillas.
  38. 38. Cut the finished tortillas into pieces.
  39. 39. Serve the tortillas warm.
