  1. 1. Preheat the oven to 200 degrees Celsius fan-forced.
  2. 2. Peel the garlic clove and chop it finely.
  3. 3. Finely chop the olives as well.
  4. 4. Wash the chili pepper, remove the stem, and chop it finely.
  5. 5. Mix the chopped olives, garlic, and chili with the oil.
  6. 6. Season the mixture with lemon juice, salt, and pepper.
  7. 7. Spread the seasoning mixture evenly over one half of all the flatbreads.
  8. 8. Crumble the goat cheese over the seasoned half of each flatbread.
  9. 9. Fold the unseasoned half of the flatbread over the filled side.
  10. 10. Place the folded flatbreads on a baking sheet lined with baking paper.
  11. 11. Bake the tortillas in the oven for about 15 minutes.
  12. 12. Cut the finished tortillas into pieces and serve.
