🍰 Pear and Cheese Tartlets with Spinach

Ingredients
- 400 g flour
- 1 tsp salt
- 0.5 cube fresh yeast (21 g)
- 3 tbsp sunflower oil
- flour (for working)
- 200 g spinach leaves (frozen)
- 100 g whipping cream
- 100 g crème fraîche
- 2 eggs
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- 4 pears
- 0.5 lemon (juice)
- 8 slices goat cheese (approx. 35 g each)
- 4 cherry tomatoes
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Press a small indentation into the center of the flour mixture.
- 3. Crumble the yeast into the indentation.
- 4. Stir the yeast with five tablespoons of lukewarm water until smooth.
- 5. Lightly dust the surface of the bowl with flour.
- 6. Let the dough rise covered in a warm place for about 15 minutes.
- 7. Add the oil and 150 milliliters of lukewarm water to the dough.
- 8. Knead everything into a smooth dough, adding a little more flour or water if necessary.
- 9. Knead the dough vigorously on a floured work surface for about 10 minutes.
- 10. Let the dough rise covered for another 45 minutes.
- 11. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 12. Line the tartlet molds (approximately 10 centimeters in diameter) with baking paper.
- 13. Let the spinach thaw.
- 14. Whisk the cream with the crème fraîche and the eggs.
- 15. Season the mixture with salt, pepper, and nutmeg.
- 16. Squeeze the spinach dry.
- 17. Chop the spinach roughly.
- 18. Stir the spinach into the cream mixture.
- 19. Roll out the dough on a floured work surface to a thickness of about 3 to 4 millimeters.
- 20. Cut out four circles slightly larger than the molds.
- 21. Line the molds with the dough circles.
- 22. Form a fluted edge on the dough.
- 23. Distribute the egg-cream mixture on the dough.
- 24. Wash the pears.
- 25. Peel the pears.
- 26. Halve the pears.
- 27. Remove the core with a melon baller.
- 28. Drizzle the pear halves with a little lemon juice.
- 29. Place the goat cheese discs into the pear halves.
- 30. Place the pear with cheese on a tartlet.
- 31. Press the pear slightly into the dough.
- 32. Wash the tomatoes.
- 33. Halve the tomatoes.
- 34. Place the tomato halves in the center of the pear.
- 35. Bake the tartlets in the preheated oven on the middle rack for about 30 minutes.
