🍽️ Italian Cheese Spinach Dumplings (Malfatti)

Ingredients
- 500 g spinach leaves
- salt
- 175 g ricotta
- 1 tsp. lemon zest
- 120 g freshly grated parmesan
- 2 eggs
- 1 egg yolk
- 200 flour
- pepper (from the mill)
- nutmeg
- butter (for the dish)
- parsley (for garnish)
Instructions
- 1. Wash the spinach thoroughly and remove the tough stems.
- 2. Blanch the spinach briefly in boiling salted water.
- 3. Shock the spinach immediately with cold water and squeeze it well to remove excess moisture.
- 4. Finely chop the spinach.
- 5. Mix the spinach with ricotta, lemon zest, 60 g of Parmesan, eggs, egg yolk, and flour to form a smooth dough.
- 6. Adjust the amount of flour slightly if necessary so that the dough is not too sticky.
- 7. Season the dough with salt, pepper, and nutmeg.
- 8. Scoop out the dumplings with a spoon and place them on a floured board.
- 9. Cook a test dumpling to check stability, and add more flour or egg if necessary.
- 10. Add all the dumplings together to boiling salted water.
- 11. Simmer the dumplings gently for about 8 minutes.
- 12. Preheat the oven to 180 °C fan setting.
- 13. Remove the dumplings with a slotted spoon.
- 14. Place them in a greased, ovenproof dish.
- 15. Sprinkle the remaining cheese over the dumplings.
- 16. Bake the dumplings in the preheated oven for 4 to 5 minutes.
- 17. Serve the dumplings garnished with parsley.
