🍰 Cheese-Chocolate Cake

Ingredients
- 400 g flour
- 2 egg yolks
- 250 g butter
- 5 tbsp whipping cream
- 1 pinch salt
- 100 g sugar
- 4 tbsp cocoa powder (dark)
- 1 packet baking powder
- 5 eggs
- 750 g low-fat quark
- 100 g sour cream
- 150 g yogurt (0.3% fat)
- 1 untreated lemon (zest)
- 2 packets vanilla pudding powder (for baking, á for 500 ml liquid)
- 75 g sugar (to taste)
- 1 egg yolk
- 4 tbsp whipping cream
Instructions
- 1. Put all the ingredients for the dough into a large bowl.
- 2. Mix the ingredients using the dough hooks of the hand mixer.
- 3. Knead the dough briefly by hand if necessary.
- 4. Wrap the dough tightly in cling film.
- 5. Place the dough in the refrigerator for at least 30 minutes.
- 6. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 7. Separate the eggs by separating the yolks from the whites.
- 8. Stir the egg yolks until smooth with the quark, sour cream, yogurt, lemon zest, and pudding powder.
- 9. Whip the egg whites with the sugar until very stiff.
- 10. Gently fold the egg whites into the quark mixture.
- 11. Roll out two-thirds of the dough to the size of a baking sheet.
- 12. Place the dough on a baking sheet lined with baking paper.
- 13. Spread the quark mixture evenly over the dough.
- 14. Crumble the remaining dough into small pieces.
- 15. Distribute the dough pieces over the quark mixture.
- 16. Bake the cake in the preheated oven for 35 to 40 minutes.
- 17. Whisk the egg yolk with the cream.
- 18. Pour the egg yolk and cream mixture over the cake after baking.
- 19. Finish baking the cake for another 15 minutes.
- 20. Take the cake out of the oven.
- 21. Let the cake cool down completely.
- 22. Cut the cake into pieces.
- 23. Serve the cake pieces.
