  1. 1. Preheat the oven to 220 degrees Celsius with top heat.
  2. 2. Whisk the eggs in a bowl.
  3. 3. Season the eggs with some pepper and a pinch of salt.
  4. 4. Mix the cheese with the cream and the herbs in a separate bowl.
  5. 5. Heat a frying pan over medium to high heat.
  6. 6. Add some butter to the hot pan and let it melt.
  7. 7. Pour half of the egg mixture into the pan.
  8. 8. Wait briefly until the eggs start to set on the bottom.
  9. 9. Spread one quarter of the cheese filling over half of the omelette.
  10. 10. Fold the omelette in half to enclose the filling.
  11. 11. Place the pan in the oven for about 5 minutes.
  12. 12. Bake the omelette until the cheese is melted.
  13. 13. Remove the pan from the oven.
  14. 14. Repeat steps 5 to 13 with the remaining egg mixture and cheese filling to bake three more omelettes.
  15. 15. Gently fold the finished omelettes.
  16. 16. Serve the omelettes immediately while warm.
