  1. 1. Put water, butter, and a pinch of salt in a pot.
  2. 2. Heat the mixture until the butter is completely melted.
  3. 3. Pour the flour into the pot all at once.
  4. 4. Stir immediately until a firm dough ball forms.
  5. 5. Continue turning the mixture in the pot until a white layer forms on the bottom.
  6. 6. Transfer the dough to a separate bowl.
  7. 7. Stir one egg into the dough.
  8. 8. Let the mixture cool down slightly.
  9. 9. Get the beaters of your hand mixer ready.
  10. 10. Stir the remaining eggs into the dough one by one.
  11. 11. Finely grate the Emmental cheese.
  12. 12. Mix the grated cheese with the baking powder.
  13. 13. Preheat the oven to 200 degrees (Gas Level 3 or Convection 180 degrees).
  14. 14. Line a baking sheet with parchment paper.
  15. 15. Get two teaspoons ready.
  16. 16. Place small mounds of dough onto the sheet.
  17. 17. Leave some space between the mounds.
  18. 18. Stir the cheese-powder mixture and the pistachios into the dough.
  19. 19. Bake the balls for about 40 minutes.
