  1. 1. Roughly chop the walnuts into small pieces.
  2. 2. Wash the arugula thoroughly and shake it dry or use a salad spinner.
  3. 3. Using a sharp knife, cut off the peel of the grapefruit and orange completely until only the fruit flesh is visible.
  4. 4. Carefully cut the fillets out between the membranes and catch the released juice in a bowl.
  5. 5. Squeeze the remaining membranes to extract the rest of the juice.
  6. 6. Whisk the olive oil, honey, and two to three tablespoons of the citrus fruit juice together in a small bowl.
  7. 7. Finally season the dressing with a pinch of salt.
  8. 8. Slice the goat cheese diagonally.
  9. 9. Arrange the cheese slices on a serving plate.
  10. 10. Decoratively arrange the citrus fillets, walnuts, and arugula on top of the cheese.
  11. 11. Drizzle the prepared honey dressing over the dish and serve immediately.
