  2. 2. Cook the macaroni in salted water until very al dente.
  3. 3. Drain the pasta and rinse it with cold water to stop the cooking process.
  4. 4. Peel the onion and cut it into fine cubes.
  5. 5. Sweat the onion cubes in hot butter.
  6. 6. Stir in the flour and cook it briefly together with the onions.
  7. 7. Deglaze the mixture with cream and milk.
  8. 8. Simmer the sauce, stirring occasionally, for about 5 minutes.
  9. 9. Stir half of the cheese into the sauce.
  10. 10. Season the sauce with salt, pepper, and cayenne pepper.
  11. 11. Wash the tomatoes and halve them.
  12. 12. Mix the pasta with the halved tomatoes.
  13. 13. Transfer the pasta and tomato mixture into a baking dish.
  14. 14. Pour the cheese cream sauce over the pasta.
  15. 15. Sprinkle the remaining cheese evenly over the top.
  16. 16. Bake the dish in the preheated oven until the cheese is golden brown.
  17. 17. Garnish the finished dish with chives before serving.
