🍰 Quark Cake with Cherries

Ingredients
- 500 g fresh cherries (or from a jar)
- 3 tbsp lemon juice
- 1 packet vanilla sugar
- 750 g low-fat quark
- 4 eggs
- 125 ml milk
- 2 packets vanilla pudding powder
- 125 g sugar
- 1 pinch salt
- butter (for the pan)
- breadcrumbs (for the pan)
- powdered sugar (for dusting)
Instructions
- 1. Wash the cherries thoroughly.
- 2. Pit the cherries.
- 3. If using canned cherries, let them drain well.
- 4. Separate the eggs. Keep the yolks separate from the whites.
- 5. Whisk the egg yolks with the milk.
- 6. Add the pudding powder to the mixture.
- 7. Add the lemon juice.
- 8. Add the vanilla sugar.
- 9. Add the sugar.
- 10. Add a pinch of salt.
- 11. Mix everything well with the quark.
- 12. Brush the baking pan with butter.
- 13. Coat the pan with breadcrumbs.
- 14. Whip the egg whites until stiff.
- 15. Gently fold the whipped egg whites into the quark mixture.
- 16. Pour the batter into the prepared pan.
- 17. Smooth the surface.
- 18. Distribute the cherries evenly on top.
- 19. Press the cherries slightly into the batter.
- 20. Preheat the oven to 180 degrees.
- 21. Place the pan in the center of the oven.
- 22. Bake the cake for approx. 1 1/4 hours.
- 23. Do a doneness test to check if the cake is ready.
- 24. Remove the cake from the oven.
- 25. Let the cake cool down a bit.
- 26. Remove the cake from the pan.
- 27. Let the cake cool completely.
- 28. Dust the cake with powdered sugar before serving.
- 29. Cut the cake into pieces.
