Ingredients
- 2 Eggs
- 150 g Flour
- 1 tsp Salt
- 1 tsp Oil
- 200 ml Beer
- 600 g Semi-hard cheese
- Salt
- 750 g Fat (or oil for frying)
- Lemon zest (for garnish)
Instructions
- 1. Separate the eggs. Chill the egg whites.
- 2. Mix flour, salt, oil, egg yolks, and beer into a batter.
- 3. Beat the batter vigorously with a whisk.
- 4. Let the batter rest, covered, for one hour.
- 5. Cut the cheese into slices about 0.5 cm thick.
- 6. Cut the cheese slices into squares about 5 cm in size.
- 7. Heat the oil in a deep fryer to 180 degrees Celsius.
- 8. Test the heat: Hold a wooden stick into the oil until small bubbles form.
- 9. Whip the cold egg whites until stiff.
- 10. Gently fold the egg whites into the beer batter.
- 11. Dip the cheese squares into the batter using a fork.
- 12. Let excess batter drip off the cheese.
- 13. Fry the cheese pieces one by one until golden brown in the hot oil.
- 14. Place the finished pieces on kitchen paper to absorb excess oil.
- 15. Keep the finished cheese pieces warm in the oven at 80 degrees Celsius.
