🍽️ Grilled Cod Fillet on Spiced Sauerkraut

Ingredients
- 1 onion
- 2 red bell peppers
- 1 tbsp olive oil
- 500 g sauerkraut
- 15 g tomato paste (1 tbsp)
- salt
- pepper
- 3 tsp sweet paprika powder
- 500 g cod fillet
- 1 lemon (juice)
- 4 sprigs dill
- 4 sprigs parsley
- 120 g cream cheese (30% fat in dry matter)
Instructions
- 1. Peel the onion and chop it very finely.
- 2. Halve the bell peppers, remove the seeds, and wash them.
- 3. Cut the bell peppers into small cubes.
- 4. Heat the oil in a pot.
- 5. Sauté the onions and pepper cubes over medium heat for 4 minutes.
- 6. Add the sauerkraut and cook it for another 2 minutes.
- 7. Pour in 100 milliliters of hot water.
- 8. Stir in the tomato paste.
- 9. Season the mixture with salt, pepper, and paprika powder.
- 10. Let the sauce come to a brief boil.
- 11. Reduce the heat and let the sauerkraut simmer for 10 minutes on low heat.
- 12. Rinse the cod fillets under running water.
- 13. Pat the fish dry with a kitchen towel.
- 14. Cut the fillets into 4 equal pieces.
- 15. Lightly salt the fish pieces.
- 16. Drizzle the fish with 1 tablespoon of lemon juice.
- 17. Wash the dill and parsley sprigs.
- 18. Shake the herbs dry.
- 19. Finely chop the herbs.
- 20. Mix the cream cheese with the chopped herbs.
- 21. Season the cream cheese mixture with salt and pepper.
- 22. Stir the remaining lemon juice into the cream cheese mixture.
- 23. Spread the cooked sauerkraut in a baking dish.
- 24. Place the cod fillet pieces on top of the sauerkraut.
- 25. Spread the cream cheese mixture evenly over the fish pieces.
- 26. Preheat the oven to 200 degrees (convection: 180 degrees; gas: setting 3).
- 27. Cook the dish in the preheated oven for 20 minutes.
