🍽️ Crispy Cod and Brussels Sprouts Gratin

Ingredients
- 1 tbsp olive oil
- 1 kg Brussels sprouts
- salt
- 4 tomatoes
- 600 g cod fillet
- pepper (from the mill)
- lemon juice
- 250 ml whipping cream
- 3 eggs
- 100 g grated cheese (e.g. Emmental)
- 1 tbsp freshly chopped parsley
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Brush a baking dish with some oil.
- 3. Remove any wilted leaves from the Brussels sprouts.
- 4. Cut a small cross into the stem end of each Brussels sprout.
- 5. Boil the Brussels sprouts in salted water for about 5 minutes.
- 6. Immediately shock the Brussels sprouts with cold water.
- 7. Let the Brussels sprouts drain well.
- 8. Wash the tomatoes thoroughly.
- 9. Cut the tomatoes into quarters.
- 10. Remove the seeds from the tomatoes.
- 11. Place the Brussels sprouts and tomatoes into the prepared dish.
- 12. Rinse the cod under running water.
- 13. Pat the cod dry with kitchen paper.
- 14. Place the cod on top of the vegetables in the dish.
- 15. Season the cod and vegetables with salt and pepper.
- 16. Drizzle some lemon juice over the cod.
- 17. Mix the cream with the eggs and the grated cheese.
- 18. Season the cream mixture again with salt and pepper.
- 19. Pour the cream mixture evenly over everything.
- 20. Bake the gratin in the oven for about 30 minutes.
- 21. Remove the gratin from the oven when it is golden brown.
- 22. Sprinkle the finished dish with fresh parsley.
- 23. Serve the gratin hot.
