🍽️ Steamed Cod on a Bed of Spinach

Ingredients
- 10 g ginger root
- 2 fresh red chili peppers
- 500 g spinach
- 600 g cod fillet
- 0.5 lemon (thinly peeled lemon zest)
- 2 garlic cloves
- 4 tbsp soy sauce
- 3 tbsp rapeseed oil
- 1 tbsp sugar
- 0.5 lemon (juice)
- salt
- pepper (from the mill)
- 150 g parboiled rice
Instructions
- 1. Place the rice in a pot, cover with 350 milliliters of water, and bring to a brief boil. Turn off the heat, cover the pot, and let it sit until the rice is tender.
- 2. Cut the lemon peel into thin strips. Peel the ginger and garlic clove. Slice half of each into thin rounds and press the remaining halves through a garlic press.
- 3. Wash the chili peppers, make a lengthwise slit, remove the seeds, and cut them into thin strips.
- 4. Whisk together soy sauce, 4 tablespoons of water, 2 tablespoons of oil, sugar, 1 tablespoon of lemon juice, salt, and pepper to make the sauce. Stir in the pressed ginger and garlic.
- 5. Wash the spinach, remove any tough stems, and let it drain well.
- 6. Bring about 500 milliliters of water to a boil in a pot along with the lemon peel, ginger slices, and garlic slices. Brush a suitable steamer insert with 1 tablespoon of oil and line it with the spinach leaves.
- 7. Cut the cod fillets into large portions. Place them on the spinach, drizzle with the remaining lemon juice, season with salt and pepper, and sprinkle the chili strips on top. Steam covered for about 5 minutes.
- 8. Serve the fish with the soy-lemon sauce. Serve the cooked rice on the side.
