🍽️ Cod with Mustard-Herb Crust

Ingredients
- 720 g cod fillet (4 cod fillets)
- 4 tbsp olive oil
- salt
- pepper
- 3 sprigs parsley
- 1 egg yolk
- 4 tbsp grainy mustard
- 2 tbsp breadcrumbs
Instructions
- 1. Rinse the cod fillets under cold running water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Brush the fillets with two tablespoons of oil.
- 4. Season the fish with salt and pepper.
- 5. Place the fillets on a baking rack lined with baking paper.
- 6. Wash the parsley and shake it dry.
- 7. Finely chop the parsley.
- 8. Separate the egg and save the egg white for another use.
- 9. Mix the remaining oil with the mustard in a bowl.
- 10. Add the chopped parsley and the egg yolk to the oil-mustard mixture.
- 11. Stir in the breadcrumbs until a paste-like consistency forms.
- 12. Spread the crust mixture evenly over the cod fillets.
- 13. Preheat the oven to 250 °C (220 °C with fan or the highest gas setting).
- 14. Bake the fish in the preheated oven for 8 to 10 minutes.
