🍽️ Cod with Orange Sauce and Vegetables

Ingredients
- 4 cod fillets
- 2 oranges
- 2 zucchinis
- 1 bunch carrots
- 1 bunch spring onions
- 2 shallots
- 2 tbsp butter
- 125 g whipping cream
- 2 sprigs parsley
- salt
- pepper
Instructions
- 1. Peel one orange thickly and slice it.
- 2. Squeeze the juice from the other orange.
- 3. Wash the fish and pat it dry.
- 4. Season the fish with salt.
- 5. Drizzle the fish with 2 teaspoons of orange juice.
- 6. Wash the zucchini and cut off the ends.
- 7. Cut the zucchini lengthwise into batons.
- 8. Peel the carrots and wash them.
- 9. Slice the carrots.
- 10. Trim the spring onions and cut off the ends.
- 11. Wash the spring onions.
- 12. Cut the spring onions into coarse pieces.
- 13. Bring salted water to a boil.
- 14. Blanch the vegetables (cook briefly in boiling water) for 4 minutes.
- 15. Remove the vegetables.
- 16. Shock the vegetables in ice-cold water.
- 17. Drain the vegetables well.
- 18. Peel the shallots.
- 19. Finely chop the shallots.
- 20. Sauté the shallots in the butter.
- 21. Add orange juice.
- 22. Simmer the vegetables in it for 2 minutes.
- 23. Place the fish fillets on top of the vegetables.
- 24. Close the lid tightly.
- 25. Simmer the fish for 10 minutes.
- 26. Remove the fish.
- 27. Keep the fish warm.
- 28. Pour in cream.
- 29. Reduce the sauce briefly.
