🍽️ Crispy Cod on Creamy Garlic Mashed Potatoes with Fresh Herb Sauce

Ingredients
- 750 g floury potatoes
- 4 garlic cloves
- salt
- 125 ml milk
- 2 tbsp butter
- pepper (from the mill)
- a handful of flat-leaf parsley
- 1 sprig mint
- 2 tbsp almond kernels
- 1 tsp hot mustard
- 75 ml olive oil

- 4 cod fillets (approx. 180 g each)

Instructions
- 1. Peel the potatoes and the garlic.
- 2. Place the potatoes in a pot with salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Add the garlic to the pot when there are 10 minutes of cooking time left.
- 5. Preheat the oven to 160 degrees Celsius using top and bottom heat.
- 6. Rinse the parsley and mint under running water.
- 7. Pat the herbs dry with a kitchen towel.
- 8. Strip the leaves from the stems of the herbs.
- 9. Put the herbs, almonds, mustard, and oil into a blender.
- 10. Blend the mixture into a smooth sauce.
- 11. Season the sauce with salt and pepper to taste.
- 12. Rinse the cod under running water.
- 13. Pat the fish dry.
- 14. Season the cod with salt and pepper.
- 15. Drizzle some olive oil over the fish.
- 16. Line a baking tray with baking paper.
- 17. Place the cod on the prepared tray.
- 18. Place the tray in the oven.
- 19. Bake the fish for about 10 minutes.
- 20. Drain the potatoes and garlic.
- 21. Let the vegetables steam dry for a moment.
- 22. Mash the potatoes and garlic with a potato masher.
- 23. Add the hot milk and butter to the mash.
- 24. Mash everything into a smooth puree.
- 25. Season the puree with salt and pepper.
- 26. Distribute the puree onto the plates.
- 27. Wash the arugula.
- 28. Remove tough stems or wilted greens from the arugula.
- 29. Shake the arugula dry.
- 30. Spread the arugula over the mashed potatoes.
- 31. Place a piece of baked cod on the arugula.
- 32. Drizzle the green sauce over the fish.
- 33. Garnish the dish with lemon slices.
- 34. Serve the food immediately.
