🍽️ Cod with Asian Vegetables in Soy Sauce

Ingredients
- 8 Cod fillets (kitchen-ready approx. 800 g)
- 250 g Baby corn
- 8 Spring onions
- 1 red bell pepper
- 2 Carrots
- 2 stalks Celery
- 2 Garlic cloves
- 2 tbsp Vegetable oil
- 2 tbsp Rice wine
- 2 tbsp Soy sauce
- 2 tbsp Fish sauce
- Salt
- Pepper
Instructions
- 1. Rinse the fish fillets under running water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Cut each fillet in half.
- 4. Rinse the corn and pat it dry as well.
- 5. Clean the spring onions and wash them.
- 6. Cut the spring onions diagonally into pieces about 4 centimeters long.
- 7. Wash the bell pepper.
- 8. Halve the bell pepper and remove the core.
- 9. Cut the bell pepper into thin strips.
- 10. Peel the carrots.
- 11. Shave the carrots diagonally into thin slices.
- 12. Peel the garlic cloves.
- 13. Cut the garlic into thin slices as well.
- 14. Wash the celery.
- 15. Remove any fibrous strings from the celery.
- 16. Cut the celery crosswise into slices.
- 17. Bring a pot of salted water to a boil.
- 18. Add the corn, spring onions, pepper strips, carrots, and celery to the boiling water.
- 19. Cook the vegetables for about 4 minutes until they are slightly firm to the bite.
- 20. Blanching here means cooking the vegetables briefly in boiling water.
- 21. Preheat a wok or a large frying pan on the stove.
- 22. Add a little oil to the hot pan.
- 23. Fry the garlic slices briefly until fragrant.
- 24. Place the fish fillets in the pan.
- 25. Fry the fillets on one side for about 2 minutes until golden brown.
- 26. Turn the fillets over to the other side.
- 27. Deglaze the dish with 4 tablespoons of water.
- 28. Add rice wine.
- 29. Add soy sauce.
- 30. Add fish sauce.
- 31. Reduce the heat on the stove.
- 32. Let the fillets cook in the sauce for another 1 to 2 minutes.
- 33. Season the fish with salt to taste.
- 34. Season the fish with pepper to taste.
- 35. Drain the cooked vegetables in a colander.
- 36. Distribute the vegetables onto the serving plates.
- 37. Place the fish fillets with the sauce on top.
- 38. Serve the dish immediately while warm.
