🍽️ Cod in Mustard Marinade with Kohlrabi and Fried Onions

Ingredients
- 1 red onion
- 4 cod fillets (approx. 150 g each)
- lemon juice
- 500 g kohlrabi
- salt
- pepper (from a mill)
- nutmeg
- 125 ml vegetable broth
- 125 g whipping cream
- 1 tbsp yellow mustard seeds
- 2 tbsp ghee
- oil (for frying)
- 2 sprigs dill
Instructions
- 1. Peel the red onion and slice it into thin rings.
- 2. Drizzle the fish fillets with lemon juice and let them marinate for about 5 minutes.
- 3. Peel the kohlrabi and cut them into 4 cm long, narrow sticks.
- 4. Peel 1 shallot and dice it finely.
- 5. Sauté the shallot in butter until translucent.
- 6. Add the kohlrabi and sauté it briefly.
- 7. Season the vegetables with salt, pepper, and a pinch of nutmeg.
- 8. Deglaze the vegetables with broth and cream.
- 9. Cook the kohlrabi until tender but still firm to the bite.
- 10. Crush the mustard seeds coarsely in a mortar.
- 11. Mix the mustard seeds with salt and a little pepper.
- 12. Pat the fish dry.
- 13. Season the fish with the mustard-salt mixture.
- 14. Heat the ghee in a pan.
- 15. Fry the fish in it until golden yellow.
- 16. Turn the fish and fry it on the other side until golden brown.
- 17. Fry the onion rings in hot oil for 2 minutes.
- 18. Remove the onions and drain them on kitchen paper.
- 19. Wash the dill and shake it dry.
- 20. Chop the dill coarsely.
- 21. Sprinkle the kohlrabi vegetables with the dill.
- 22. Arrange the fried fish fillets on the vegetables.
- 23. Garnish the dish with the fried onion rings.
