🍽️ Crispy Cod and Apple Bites

Ingredients
- 2 small apples (e.g. Boskop)
- 1 tbsp lemon juice
- 2 anchovies (in salt)
- 2 tbsp yogurt
- 2 tbsp mayonnaise
- 1 tbsp chive rings
- sea salt
- white pepper
- 300 g cod fillet (skinless)
- 2 tbsp rapeseed oil
- dill (for garnishing)
Instructions
- 1. Wash the apples thoroughly.
- 2. Cut the apples into quarters and remove the core.
- 3. Dice the apple pieces into very small cubes.
- 4. Mix the apple cubes immediately with the lemon juice.
- 5. Rinse the anchovies under running water.
- 6. Pat the anchovies dry with a kitchen towel.
- 7. Chop the anchovies finely.
- 8. Cut the chives into fine rings.
- 9. Mix the chopped anchovies, yogurt, and mayonnaise into the apple mixture.
- 10. Fold the chives into the cream.
- 11. Season the apple cream with salt and pepper.
- 12. Rinse the cod under cold water.
- 13. Dry the fish pieces well with kitchen paper.
- 14. Heat the oil in a pan over medium heat.
- 15. Fry the cod for about 1 to 2 minutes per side until golden brown.
- 16. Reduce the stove setting to the lowest level.
- 17. Let the fish cook gently for another 2 to 3 minutes until fully cooked.
- 18. Season the finished fish with a pinch of salt.
- 19. Finely chop the fresh dill.
- 20. Spread the apple cream evenly onto the small tasting spoons.
- 21. Place a piece of cod on each spoon.
- 22. Garnish the bites with the fresh dill.
- 23. Serve the bites immediately.
