  3. 3. Dice the apple pieces into very small cubes.
  4. 4. Mix the apple cubes immediately with the lemon juice.
  5. 5. Rinse the anchovies under running water.
  6. 6. Pat the anchovies dry with a kitchen towel.
  7. 7. Chop the anchovies finely.
  8. 8. Cut the chives into fine rings.
  9. 9. Mix the chopped anchovies, yogurt, and mayonnaise into the apple mixture.
  10. 10. Fold the chives into the cream.
  11. 11. Season the apple cream with salt and pepper.
  12. 12. Rinse the cod under cold water.
  13. 13. Dry the fish pieces well with kitchen paper.
  14. 14. Heat the oil in a pan over medium heat.
  15. 15. Fry the cod for about 1 to 2 minutes per side until golden brown.
  16. 16. Reduce the stove setting to the lowest level.
  17. 17. Let the fish cook gently for another 2 to 3 minutes until fully cooked.
  18. 18. Season the finished fish with a pinch of salt.
  19. 19. Finely chop the fresh dill.
  20. 20. Spread the apple cream evenly onto the small tasting spoons.
