  1. 1. Rub the lamb meat generously with salt and pepper.
  2. 2. Heat some olive oil in a large casserole dish.
  3. 3. Brown the meat on all sides.
  4. 4. Rinse the garlic cloves but do not peel them.
  5. 5. Briefly rinse the herbs and pat them dry.
  6. 6. Add the garlic and herbs to the hot fat.
  7. 7. Let the aromas sweat in the fat for a short time.
  8. 8. Deglaze the meat with white wine.
  9. 9. Add the lamb broth.
  10. 10. Braise the meat in the preheated oven at 200 degrees (convection: 180 degrees, gas: level 2-3) for 90 minutes.
  11. 11. Season the sauce to taste with salt and pepper at the end.
