🍽️ Raspberry Tart

Ingredients
- 200 g flour
- 140 g cold butter
- 60 g sugar
- 1 pinch salt
- 1 egg white
- 350 g red currants
- 3 egg yolks
- 70 g powdered sugar
- 200 g whipping cream
- 1 vanilla pod (pulp)
- 1 tbsp cornstarch
Instructions
- 1. Put the flour, cold diced butter, sugar, salt, and egg white into the mixing bowl.
- 2. Process the ingredients with the dough hook of the food processor until crumbly crumbs form.
- 3. Quickly knead the mixture into a smooth dough with your hands.
- 4. Shape the dough into a ball.
- 5. Wrap the ball in cling film.
- 6. Place the dough in the refrigerator for at least one hour.
- 7. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 8. Wash the redcurrants and remove the stems.
- 9. Pat the berries dry with a kitchen towel.
- 10. Whisk the egg yolks, powdered sugar, cream, vanilla seeds, and starch in a bowl.
- 11. Dust the work surface with flour.
- 12. Roll out the dough on the floured surface.
- 13. Line a 26-centimeter tart pan with the dough.
- 14. Distribute the redcurrants evenly over the dough base.
- 15. Bake the tart for about 10 minutes.
- 16. Carefully pour the egg yolk mixture over the berries.
- 17. Finish baking the tart at 225 degrees for another 10 to 15 minutes.
- 18. Take the tart out of the oven.
- 19. Let the tart cool completely.
- 20. Lightly dust the finished tart with powdered sugar before serving.
