🍽️ Fruity Raspberry-Strawberry Ice

Ingredients
- 500 g red currants
- 125 ml red currant juice
- 200 g sugar
- 1 egg white
- 2 tbsp cassis (red currant liqueur)
Instructions
- 1. Rinse the raspberries and strawberries under running water.
- 2. Remove the green stems from the strawberries.
- 3. Cut the strawberries into small cubes.
- 4. Place the raspberries, strawberry cubes, lemon juice, 100 milliliters of water, and sugar into a pot.
- 5. Bring the mixture to a boil on the stove.
- 6. Let the mixture simmer gently over low heat for three minutes.
- 7. Remove the pot from the heat.
- 8. Let the berry mixture cool down completely.
- 9. Beat the egg whites in a clean bowl until stiff peaks form.
- 10. Press the cooled berry mixture through a fine sieve into a metal bowl to remove the seeds.
- 11. Stir the liqueur into the filtered berry mixture.
- 12. Gently fold the beaten egg whites into the berry mixture using a spoon.
- 13. Pour the finished mixture into a freezer-safe container.
- 14. Let the sorbet freeze in the freezer for about four hours.
- 15. Stir the mixture occasionally while it freezes to make it creamy.
- 16. Fill the finished sorbet into individual glasses.
- 17. Garnish the ice cream as you like with fresh, sugared berries.
- 18. Serve the sorbet immediately.
