🍽️ Blackcurrant Bars

Ingredients
- 250 g soft butter
- 250 g sugar
- 1 untreated orange (zest)
- 5 eggs
- 1 pinch salt
- 400 g flour
- 100 g ground almond kernels
- 2 tsp baking powder
- 200 ml milk
- 80 g chocolate shavings
- 500 g blackcurrants
- 400 ml whipping cream
- 2 packets cream stabilizer
- 2 tbsp vanilla sugar
- 20 ml crème de cassis
- 50 g orange marmalade
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Line a baking tray with baking paper.
- 3. Beat the butter with the sugar and the orange zest until creamy.
- 4. Stir in the eggs one by one into the butter mixture.
- 5. Mix the flour with the almonds and the baking powder.
- 6. Alternately add the flour mixture and the milk to the butter cream and stir in quickly.
- 7. Make sure a pliable dough is formed.
- 8. Fold in the chocolate shavings into the dough.
- 9. Spread the dough evenly on the baking tray.
- 10. Bake the dough for about 40 minutes until golden brown.
- 11. Perform the skewer test to check the cooking time.
- 12. Take the cake out of the oven.
- 13. Rinse the redcurrants.
- 14. Pat the berries dry.
- 15. Strip the berries from the stems.
- 16. Whip the cream stiffly with the cream stabilizer, the vanilla sugar and the cassis.
- 17. Spread the still hot cake with the jam.
- 18. Let the cake cool completely.
- 19. Sprinkle the redcurrants on the cake.
- 20. Add the cassis cream on top.
- 21. Smooth the cream.
- 22. Cut the cake into pieces.
- 23. Serve the slices.
