  1. 1. Preheat the oven to 180 degrees Celsius with fan setting.
  2. 2. Line a baking tray with baking paper.
  3. 3. Beat the butter with the sugar and the orange zest until creamy.
  4. 4. Stir in the eggs one by one into the butter mixture.
  5. 5. Mix the flour with the almonds and the baking powder.
  6. 6. Alternately add the flour mixture and the milk to the butter cream and stir in quickly.
  7. 7. Make sure a pliable dough is formed.
  8. 8. Fold in the chocolate shavings into the dough.
  9. 9. Spread the dough evenly on the baking tray.
  10. 10. Bake the dough for about 40 minutes until golden brown.
  11. 11. Perform the skewer test to check the cooking time.
  12. 12. Take the cake out of the oven.
  13. 13. Rinse the redcurrants.
  14. 14. Pat the berries dry.
  15. 15. Strip the berries from the stems.
  16. 16. Whip the cream stiffly with the cream stabilizer, the vanilla sugar and the cassis.
  17. 17. Spread the still hot cake with the jam.
  18. 18. Let the cake cool completely.
  19. 19. Sprinkle the redcurrants on the cake.
  20. 20. Add the cassis cream on top.
  21. 21. Smooth the cream.
  22. 22. Cut the cake into pieces.
  23. 23. Serve the slices.
