🍽️ Fresh Redcurrant Jam with Tarragon

Ingredients
- 1 kg red currants
- 500 g jam sugar (2:1)
- 1 tarragon sprig
Instructions
- 1. Fill a pot with water and bring it to a boil.
- 2. Place the jars and lids for the jam into the boiling water.
- 3. Sterilize the jars and lids in the water for about 10 minutes.
- 4. Remove the jars and lids from the water.
- 5. Place them on a clean cloth and let them drain.
- 6. Remove the redcurrants from the stems.
- 7. Wash the berries thoroughly.
- 8. Dry the berries with a kitchen towel.
- 9. Take half of the redcurrants.
- 10. Mash these berries with a fork.
- 11. Add the jam sugar and a sprig of tarragon to the mashed berries.
- 12. Mix the ingredients well together.
- 13. Let the mixture steep for about 30 minutes.
- 14. Place the pot with the mixture on the stove.
- 15. Set the stove to medium heat.
- 16. Stir the jam constantly while cooking.
- 17. Bring the jam to a boil and let it cook for 6 to 8 minutes.
- 18. Remove the pot from the stove.
- 19. Fish out the tarragon sprig from the jam.
- 20. Fill the hot jam into the prepared jars.
- 21. Fill the jars almost to the brim.
- 22. Seal the jars tightly with the lids.
- 23. Turn the sealed jars upside down for 5 minutes.
- 24. Turn the jars back over.
- 25. Let the jars cool down completely.
