  1. 1. Fill a pot with water and bring it to a boil.
  2. 2. Place the jars and lids for the jam into the boiling water.
  3. 3. Sterilize the jars and lids in the water for about 10 minutes.
  4. 4. Remove the jars and lids from the water.
  5. 5. Place them on a clean cloth and let them drain.
  6. 6. Remove the redcurrants from the stems.
  7. 7. Wash the berries thoroughly.
  8. 8. Dry the berries with a kitchen towel.
  9. 9. Take half of the redcurrants.
  10. 10. Mash these berries with a fork.
  11. 11. Add the jam sugar to the mashed fruit mixture.
  12. 12. Add the tarragon sprig.
  13. 13. Mix everything well together.
  14. 14. Let the mixture steep for about 30 minutes.
  15. 15. Place the pot with the mixture on the stove.
  16. 16. Set the heat to medium.
  17. 17. Stir the mixture constantly.
  18. 18. Bring the jam to a boil and cook for 6 to 8 minutes.
  19. 19. Remove the pot from the heat.
  20. 20. Fish out the tarragon sprig from the jam.
  21. 21. Fill the hot jam into the prepared jars.
  22. 22. Fill the jars almost to the brim.
  23. 23. Seal the jars tightly.
  24. 24. Place the sealed jars upside down for 5 minutes.
  25. 25. Turn the jars right side up again.
  26. 26. Let the jars cool down completely.
