  2. 2. Remove the berries from the stems and place them in a pot.
  3. 3. Gently crush the berries with a spoon.
  4. 4. Wash the orange thoroughly with hot water and dry it.
  5. 5. Cut off the peel, making sure to leave no white pith behind.
  6. 6. Squeeze the juice from the orange.
  7. 7. Mix the orange juice and sugar with the redcurrants.
  8. 8. Let the mixture sit for about 30 minutes.
  9. 9. Fill the cinnamon and cardamom into a spice bag.
  10. 10. Add the spice bag to the redcurrant mixture.
  11. 11. Bring the jam to a boil while stirring.
  12. 12. Let the jam simmer vigorously for about 5 minutes.
  13. 13. Perform a gel test to check if the jam is setting.
  14. 14. Remove the orange peel and the spice bag from the pot.
  15. 15. Stir the cassis into the warm jam.
  16. 16. Fill the jam into prepared, clean jars.
  17. 17. Seal the jars tightly.
  18. 18. Turn the jars upside down for about 15 minutes.
  19. 19. Place the jars upright again and let them cool down completely.
