🍽️ Homemade Redcurrant Jam with Cinnamon and Cassis

Ingredients
- 1 kg red currants
- 1 untreated orange
- 800 g jam sugar
- 0.5 cinnamon stick
- 2 cardamom pods
- 40 ml blackcurrant liqueur
Instructions
- 1. Rinse the redcurrants under cold water.
- 2. Remove the berries from the stems and place them in a pot.
- 3. Gently crush the berries with a spoon.
- 4. Wash the orange thoroughly with hot water and dry it.
- 5. Cut off the peel, making sure to leave no white pith behind.
- 6. Squeeze the juice from the orange.
- 7. Mix the orange juice and sugar with the redcurrants.
- 8. Let the mixture sit for about 30 minutes.
- 9. Fill the cinnamon and cardamom into a spice bag.
- 10. Add the spice bag to the redcurrant mixture.
- 11. Bring the jam to a boil while stirring.
- 12. Let the jam simmer vigorously for about 5 minutes.
- 13. Perform a gel test to check if the jam is setting.
- 14. Remove the orange peel and the spice bag from the pot.
- 15. Stir the cassis into the warm jam.
- 16. Fill the jam into prepared, clean jars.
- 17. Seal the jars tightly.
- 18. Turn the jars upside down for about 15 minutes.
- 19. Place the jars upright again and let them cool down completely.
