🍳 Redcurrant Jelly with Vanilla

Ingredients
- 1 kg red currants
- 1 vanilla pod
- 0.125 l water
- 50 g sugar
- sugar for setting (1:1 ratio to juice)
Instructions
- 1. Thoroughly wash the redcurrants.
- 2. Strip the berries from the stems using a fork.
- 3. Place the berries, sugar, and water into a pot.
- 4. Stir the mixture until it comes to a boil.
- 5. Line a sieve with a cloth.
- 6. Pour the cooked fruit and juice into the sieve.
- 7. Let the juice drip slowly into a pot placed underneath.
- 8. Do not squeeze the fruit too hard to keep the jelly clear.
- 9. Cut the vanilla pod lengthwise twice.
- 10. Cut the pod into strips about four centimeters long.
- 11. Measure the drained redcurrant juice.
- 12. Add the juice, an equal amount of jam sugar, and the vanilla strips to a pot.
- 13. Bring the mixture to a boil.
- 14. Let the jelly boil vigorously for three minutes.
- 15. Fill the hot jelly into prepared jars.
- 16. Seal the jars tightly.
