🍰 Fruity Blackcurrant Muffins with Cream Glaze

Ingredients
- 200 g semolina
- 75 g flour
- 2 tsp baking powder
- 2 eggs
- 100 g sugar
- 1 packet vanilla sugar
- 2 tbsp orange liqueur
- 1 tsp grated orange peel
- 250 ml milk
- 50 g butter
- 200 g blackcurrants
- oil (for the muffin tin)
- 4 tbsp whipping cream
- 4 tbsp powdered sugar
- 1 tbsp crème de cassis
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Grease the muffin tin.
- 3. Place the greased muffin tin in the refrigerator.
- 4. Mix semolina, flour, and baking powder in a bowl.
- 5. Whisk the eggs with sugar, vanilla sugar, orange zest, milk, and oil until smooth.
- 6. Add the dry flour mixture to the egg mixture gradually and stir it in.
- 7. Gently fold the blackcurrants into the batter.
- 8. Fill the batter into the prepared muffin tin.
- 9. Bake the muffins on the middle rack for about 30 minutes.
- 10. Remove the muffins from the oven.
- 11. Let the muffins rest in the tin for 5 minutes.
- 12. Turn out the muffins onto a wire rack and let them cool completely.
- 13. Whisk cream, powdered sugar, and blackcurrant liqueur smoothly for the glaze.
- 14. Pour the glaze over the cooled muffins.
