  1. 1. Put the yogurt, one packet of vanilla sugar, and the honey into a metal bowl.
  2. 2. Stir the mixture until smooth and well combined.
  3. 3. Whip the egg whites until they form stiff peaks.
  4. 4. Gently fold the stiffly whipped egg whites into the yogurt mixture.
  5. 5. Place the covered bowl in the ice cream maker for about 2 hours.
  6. 6. Stir the mixture repeatedly during the freezing process.
  7. 7. Wash the blackberries thoroughly and remove any leaves or stems.
  8. 8. Drain the berries and set aside a few nice ones for decoration.
  9. 9. Puree the remaining blackberries and push the mixture through a sieve.
  10. 10. Sweeten the blackberry mixture with the remaining vanilla sugar.
  11. 11. Place the blackberry sauce in a cool place, covered.
  12. 12. Take the ice cream out of the freezer and let it thaw at room temperature for a few minutes.
  13. 13. Mix the ice cream with a hand blender until it is smooth and creamy.
  14. 14. Scoop balls out of the ice cream.
  15. 15. Serve the ice cream balls with the blackberry sauce and the reserved fresh berries.
