🍽️ Herb Joghurt Quark Balls

Ingredients
- 250 g yogurt
- 250 g quark
- 30 g freshly chopped herbs (e.g. parsley, chervil, chives)
- 2 garlic cloves
- salt
- 1 tsp lemon zest
- pepper (from the mill)
- olive oil
Instructions
- 1. Mix the yogurt, quark, and herbs in a bowl until the mixture is completely smooth.
- 2. Peel the garlic clove and chop it very finely.
- 3. Place the chopped garlic into a small bowl and add a pinch of salt.
- 4. Mash the garlic into a fine paste using the flat side of a knife blade.
- 5. Stir the garlic paste into the yogurt-quark mixture.
- 6. Season the mixture to taste with salt, lemon zest, and black pepper.
- 7. Line a sieve with a clean kitchen towel.
- 8. Pour the quark mixture into the lined sieve and smooth it out.
- 9. Place the sieve in the refrigerator and let the mixture drain overnight.
- 10. Take the drained mixture out of the refrigerator.
- 11. Scoop off small portions of the mixture.
- 12. Shape the portions into small balls.
- 13. Drizzle the finished balls with a little olive oil.
- 14. Serve the balls on a plate.
- 15. Serve with fresh bread if you like.
