  1. 1. Mix the yogurt, quark, and herbs in a bowl until the mixture is completely smooth.
  2. 2. Peel the garlic clove and chop it very finely.
  3. 3. Place the chopped garlic into a small bowl and add a pinch of salt.
  4. 4. Mash the garlic into a fine paste using the flat side of a knife blade.
  5. 5. Stir the garlic paste into the yogurt-quark mixture.
  6. 6. Season the mixture to taste with salt, lemon zest, and black pepper.
  7. 7. Line a sieve with a clean kitchen towel.
  8. 8. Pour the quark mixture into the lined sieve and smooth it out.
  9. 9. Place the sieve in the refrigerator and let the mixture drain overnight.
  10. 10. Take the drained mixture out of the refrigerator.
  11. 11. Scoop off small portions of the mixture.
  12. 12. Shape the portions into small balls.
  13. 13. Drizzle the finished balls with a little olive oil.
  14. 14. Serve the balls on a plate.
  15. 15. Serve with fresh bread if you like.
