🍰 Yogurt Raspberry Dessert with Cookies

Ingredients
- 200 g raspberries
- 1 tbsp lemon juice
- 3 tbsp raw cane sugar
- 8 leaves mint
- 5 whole wheat butter cookies
- 160 g yogurt (1.5% fat) (8 tbsp)
Instructions
- 1. Wash the raspberries and remove any hard stems or unripe berries.
- 2. Place the raspberries in a blender.
- 3. Add lemon juice and sugar.
- 4. Blend the mixture until it is fine and smooth.
- 5. Decide whether you want to strain the puree through a sieve to remove seeds.
- 6. Take four teaspoons of the raspberry puree and set it aside.
- 7. Wash the mint.
- 8. Shake the mint dry thoroughly.
- 9. Crumble the cookies roughly with your hands.
- 10. Distribute the cookie crumbs onto the glasses.
- 11. Pour the remaining raspberry puree over the cookies.
- 12. Add two tablespoons of yogurt to each.
- 13. Place one teaspoon of the reserved raspberry puree on top.
- 14. Garnish each dessert with two mint leaves.
- 15. Serve the dessert.
